Winter is Here ~ Beware Vitamin D Deficiency!

Vitamin D is often called the sunshine vitamin! This is because our skin makes it from sunlight. Vitamin D can also be found in these foods:

·        Salmon
·        Canned Tuna
·        Fortified Orange Juice
·        Fortified Milk* depending on amount of fat in milk
·        Fortified Yogurt
·        Sardines
·        Eggs with Yolk
·        Fortified Cereal
·        Mushrooms -Package must say “Contains Vit D”

 

Vitamin D Helps:                           

  • Keep bones and teeth healthy
  • Make the immune system strong
  • Regulate blood sugar
  • Support heart health
  • Prevent cancer

May Need More Vitamin D if You:

  • Have muscle weakness
  • Have a stress fracture
  • Have pain sensitivity
  • Often feel sad/cranky
  • Often feel sleepy
  • Have high blood pressure

 

Mushroom Soup

Makes 4 Servings


 

 

 

 

You’ll need:

1 pound portobello mushrooms
1 tablespoon olive oil
3 cloves garlic, minced
A pinch of salt & pepper
2 tablespoons butter
1/4 cup all purpose flour
2 cups veggie broth
2 cups water
1/8 teaspoon dried thyme
3/4 cup of milk
1 teaspoon soy sauce

 

To make:

  1. Wash the mushrooms to remove any dirt.
  2. Add the olive oil, mushrooms, garlic, and salt and pepper to a soup pot. Sauté the mushrooms over medium heat until the mushrooms turn a very dark brown.
  3. Add the butter and flour to the pot. Stir until the flour forms a thick paste. Don’t let the flour burn.
  4. Add veggie broth, water, and dried thyme. Stir to break up all of the flour from the bottom of the pot. Bring to a simmer.
  5. Add milk and soy sauce. Stir. Add salt & pepper to taste. Serve hot.
